The exhaust manifolds on my '91 20' center console with Ford/Indmar 302 are shot. I'm going to replace the risers as well. What company makes the best headers and risers (performance & durability)? Quality is my priority, not price. Thanks in advance for advice.

Got 1500 bucks to blow? Have I got a fabricator for you. Marine Manifolds in nearby Farmingdale, L.I., N.Y. will build you a set of copper manifolds/risers that will outlast your boat. And probably you and me too. My buddy (& Dockmaster) built himself a set back in 1979 for his then-new 20' Pilothouse and they're still on there today. And he runs his boat 5 times per week. Nice to be retired. But anyway, these copper exhausts will far outlast the Stainless Steel set-ups that are popular with the Donzi/Fountain bang-bang go-fast crowd, no doubt about it. Plus they'll take a good 40 pounds per side right out of the boat. They are DEFINITELY going in my boat when I reach repower time.
Now if you don't want to spend that kind of money (And few do), then the best bang for the buck is a set of Osco manifolds from your choice of marine parts vendors. I use Basic Power Industries in Gavin's neighborhood - Harker's Island, N.C. - they have the best prices I've found and will ship second-day FOR FREE. I can't find a better deal than that. Those things weigh a ton and have got to be expensive to ship. Try - www.basicpower.com, I think that's it, or just do a search for their site. I want to second Lep's suggestion of Basicpower. I've used them extensively while fixing up my old pilothouse (risers, manifolds, misc. parts, starter, even a re-built longblock) and have been very pleased with the price and quick delivery. However, I have not had a "return" situation happen yet, so I can't speak for how good they are with post-sale service.
